Slightly bitter due to the high concentration of oleuropein, the main polyphenol present in the leaves and fruits of the olive tree. Coratina organic extra virgin olive oil from Coratina monocultivar is certified organic and the olives are also PDO „Terra di Bari”.

On the palate it is endowed with a large vegetable charge, with nuances of artichoke and wild thistle, chicory and lettuce. Strong bitter and spicy, but balanced.
